Cheeky Monkey Sundae Coconut Ice Cream
It is so hard not to crave cool, sweet treats as soon as the days warm up. Here is one of my favourite dairy-free frozen desserts that is both decadent and refreshing (extremely kid-friendly)! Try this Cheeky Monkey Sundae, filled with fresh fruit, hazelnuts and bits of dark chocolate.
Ingredients:
3 bananas, sliced into half moons (about 2 1/2 cups)
1/3 cup chocolate chunks or carob chips
1/3 cup hazelnuts, roasted then cut in half
1 cup sweet cherries, cut in half (you can find them frozen)
1 can full fat coconut milk
1 tbs XVOO
1/2 vanilla bean, scraped
1/2 lime, juiced
Directions:
Prepare the garnishes as directed in the recipe.
Place the coconut milk, olive oil, vanilla bean and lime juice in a bowl. Stir in the sliced bananas.
Pour this into your frozen ice cream machine base and turn on. As the machine churns, towards the end, add the chocolate, nuts and cherries. That way they won't be ground down more than necessary and clog up your machine.
Empty the finished ice cream into a freezer-safe container, or enjoy out of the bowl!
Makes about one Litre of dairy free, vegan ice cream. Delicious!!
